Continuing my Miami tour exploring fast‑casual concepts...and here’s another that stood out last week! Stopped by Chuggie's (3444 Main Hwy #15), a 450‑SF fast‑casual, carry‑out burger concept in Coconut Grove from Chef Michael Beltrán ( Ariete Hospitality Group Hospitality). Small footprint with a big personality. Just opened late 2025 and already a dialed-in customer experience. What stood out to me the most was how everything came together in a small footprint: -Super fun, well‑branded design -Clean, efficient pickup‑window operations -Affordable, nostalgic menu anchored in Cuban‑inspired fritas and soft‑serve -Outdoor seating that fits the Grove vibe perfectly From a WD Partners perspective, this is a great example of where customer experience, foodservice operations, and design align. A simple concept executed with intention—designed for speed and clarity, but still rooted in culinary excellence and authentic hospitality. There’s no shortage of burger concepts out there, but Chuggie's felt like a breath of fresh air—proof that even in a crowded category, great customer experience design and operational discipline can still create something memorable. And yes… highly recommend the Chuggie's Frita Burger (chorizo patty, ketchup, crispy potato sticks). Worth the stop! Well done Chef Michael and Ariete Hospitality Group ! Apr 2026While in Miami for the RestaurantSpaces Conference, I spent time checking out a few fast‑casual, health & wellness concepts around the market. One standout was Pura Vida Miami ’s Coconut Grove flagship. A great example of how brand, restaurant design, and experience come together in a meaningful way. Warm materials, an open and intuitive customer flow, and clear branded touchpoints that make the customer journey feel effortless. It’s designed to support both how customers want to move through the space and how the foodservice operation needs to perform behind the scenes. Beyond the beautiful, layered design and easy, intuitive guest flow, I was pleasantly surprised by the retail component…a well‑curated shop featuring their private‑label health and wellness supplements that felt purposeful, not forced. Add in a menu with real depth, clean ingredients, diversity, insanely good flavors, and presentation that lives up to the brand…it was clear this was designed as a full customer experience, not just a meal. At WD Partners , this is exactly how we think about restaurant experience: customer experience first, reinforced by smart operations and store design that can scale without losing authenticity. A few takeaways from yeaterdays “State of the Industry” panel: Speed + Scale • Paris Baguette North America ( Nick Scaccio ) — Development has to move faster, and the right construction partners are now a strategic advantage. • Dutch Bros Coffee Bros ( Tim Jagneaux MBA ) — Permitting is the real bottleneck; strong municipal relationships matter more than ever. • Torchy's Tacos ’s Tacos (Graham Hildebrand) — Site selection is only as good as your data, and they’re doubling down on having the best. How their teams are evolving • Dutch Bros Coffee split their org into pre‑development/design and construction/facilities to move quicker. • They also opened a walk‑up format recently—and it’s outperforming expectations. Balancing growth • Paris Baguette North America is investing heavily in their people and culture. • Torchy's Tacos is building stronger local leadership with AGM/GM hiring. • Dutch Bros Coffee continues refining structure to support rapid expansion. AI + Automation Paris Baguette North America already has many AI pilots running—from loss prevention to in‑store heat mapping.
